Khandvi


Ingredients-
1. 1 cup gram flour(besan)
2. 1/2 cup sour curd
3. 2 cup water
4. Salt
5. Pich turmeric powder
6. Red chili powder(optional)
7. 1 tsp oil
8. 1/4 tsp mustard seeds
9. Few cumin seeds
10. Curry leaves
11. 1 splited green chili
12. 1 tsp white sesame seeds
13. 1 dry red  chili (optional)
14. 1 bay leaf(optional)
15. Fresh grated coconut
16.fresh c3oriander leaves
17. Pinch hing (asofatida)

Method-

1.mix yogurt,water and gram flour with the help of spoon or hand whisker.it should be limb free.

2.add salt,turmeric powder,pinch of red chili powder (optional) and mix.

3.pour the batter in a heavy bottom pan or in nonstick broad pan.switch on the stove top and keep the flam low and begin to stir.

4.keep on stirring. The batter would thicken and keep on thickening.keep on stirring.

5.do a taste when the batter has thicker well.

6. Spread little amount of batter on greased plat or your kitchen counter top. I am spreading it on my kitchen counter top.let it cool a bit and then begain to roll.

7.If you are unable to roll.then the batter needs to be cooked more.

8.when start bubbles and batter start little separate from pan.batter is done.finnal consistency in a picture.
Final consistency 

9.it took 18 to 20 minutes.time depends on pan and flam.

10.quickly pour batter on clean counter top and spread thin and even with the help of spatula.

11.allow to cool and cut into strips.

12.roll each strip tightly and place in a serving plate next to each other.

13.heat 1 tsp oil in a pan. Add mustard and cumin seeds.when they spluter add curry leaves and green chilies. Fry for few second.

14.Add dry red chili, bay leaf,white sesame seed and when they crackle add pinch of hing.

15.pour hot tempting mixture along with the oil on the khandvi rolls evenly.

16.garnish khandvi with shredded fresh coconut,fresh  chopped coriander.sprinkle some red chili powder (optional).

17. Khandvi is ready for serve. Serve khandvi with green chutney.
