Kaju karela sabji

Ingredients-
 1. 6-7 fresh karela(bitter gourd).
 2.12-15 casew.
 3. 2-3 tbsp oil.
 4. 1 tsp cumin coriander powder.
 5. 1/2 tsp chilli powder.
 6. 1/4 tsp termeric powder.
 7. 1 tsp jaggery.
 8. Salt to taste.
 9. 1/4 tsp mustard and cumin seeds.
 19. Bey leaf (optional).
Tip- Use karela Wich is firm and green in                 colour.The yellowish karela are ripped             once and taste Evan more bitter.
      - Don't stir karela sabji after adding water         in it because it gives litter bitter taste.just         close the lid directly after adding water           and let them cook on medium flame
Method-
 1. Scrape the skin of karela and cut them              long pieces as shown in the picture.
 2. Sprinkle some salt and mix with hand              keep aside for 15-20 minutes.
 3. With the help of hands squeeze and wash         them under running water,again squeeze       out all water.
 4. Heat oil in a pan and fry kaju.Keep them          aside.
 5. In same pan fry karela for 2-3 minutes and      take out in a plate.
 6. Heat 1 tablespoon oil in pan.When oil get        properheat add karela pieces, and add salt      if needed.Add 2 tsp of water and close the        lid.Remember don't mix karela after                  adding water otherwise sabji will get little      bitter taste.
 7. Add water on lid as shown in the image.
 8. When bitter gourd cooked well and                  become tender add casew,red chilli                    powder,turmeric powder,cumin coriander      powder,jaggery.Mix well and cook for 2-3        minutes on high flame.
 9.kaju karela sabji is ready,serve hot with           roti or paratha.
